Job Summary

The Kitchen Manager is responsible for all kitchen functions including: Training of employees in preparation, execution, plate presentation, portion control, cost control and sanitation & cleanliness, food purchasing, preparation and maintenance of quality standards, sanitation & cleanliness, waste prevention and scheduling.

Primary Duties & Responsibilities

* Promote, work and act in a manner consistent with the Mission of The Wicked Sister which is to Be innovative. Be truthful. Be thoughtful. Be memorable. Be Wicked.

* Instruct kitchen crew on food preparation, cooking and other standard company policies

* Lead and supervise activities of cooks, prep cooks and dishwashers engaged in food preparation, execution and cleaning expectations

* Ensure all food products are consistently prepared and served according to company recipes, portioning, cooking and serving methods & standards

* Ensure COVID-19 guidelines are being upheld to current guidelines and company COVID-19 Response Plan

* Monitor sanitation practices to ensure employees follow standards and regulations in accordance with food safety practices and company policy

* Check quality of raw and cooked product to ensure food safety and company standards are met

* Maintain appropriate cleaning schedules for floors, walls, hoods, equipment and storage

* Check and maintain proper food holding/refrigeration temperature control points

* Control food cost and usage by – proper purchasing, storage procedures, standard recipes, waste control procedures and training protocols

* Collaborate with owner/GM to analyze recipes to assign prices to menu items based on food, labor and overhead costs

* Work with owner/GM to plan and price menu items, establish portion sizes and prepare standard recipes, portioning, cooking and serving standards

* Schedule as required for anticipated business while ensuring all positions are staffed and labor cost objectives are met

* Determine production schedule and staffing requirements to ensure timely execution and delivery of dine in, carry out/delivery and catering

* Ensure delivered products are to specification and received in correct unit count and condition

* Inspect supplies, equipment and work areas to ensure conformance with established standards.

* Coordinate planning, budgeting and purchasing of food for anticipated business

* Coordinate and lead on-going training/professional development opportunities for kitchen employees

* Make employment/termination decisions including recruiting, interviewing, hiring, training, evaluating and disciplining kitchen employees as appropriate

· Kitchen Manager is a 50 hour per week salaried position which includes cooking shifts, training and administrative duties

· The Kitchen Manager will receive the following compensation based on a 50-hour work week

o Annual Base Salary (Starting salary will be based on experience)

o Profit Sharing Plan based on meeting food & labor objectives each quarter

o 2 weeks paid vacation

o Monthly stipend to spend at The Wicked Sister on food, drinks & swag

o Travel – Food, lodging & mileage compensated to attend trade shows, conferences and other professional development opportunities

o Flexible scheduling options

o Kitchen Manager is eligible for SIMPLE IRA with 3% employer match
